Oreo eggless cake

Before pouring into the cake tin, crush Oreo biscuits say 10 biscuits and mix it with the cake batter.
Pour it to a cake tin and keep  4 to 5 Oreo biscuits at the top and bake it.

This cake is a small twist to the eggless choc cake and it's a hit.

Quick cooker veg briyani

Ingredients :-

For seasoning

Cloves, star cloves, cinnamon stick, peppercorns, bay leaves, Jeera - each 2



For grinding (paste)

Mint leaves half cup
Galic 4 cloves
Ginger 1/2 inch
Green chili 2

Chopped Vegetables as per your choice

Carrot, green peas, cauliflower , potatoes along with chopped onion and tomatoes each 2 , big size.
Oil - 4. Tablespoon
Salt as per taste
Yogurt - 1 tblsp 
Turmeric powder 1 tsp
Red chili powder 2 tsp
Rice - 2 cups

Method :-

Add oil to the cooker and once it is hot enough add the seasoning items.
Add chopped onions, little salt and sauté till transparent.
Now add the grounded paste and keep stirring until the raw smell goes of.

Time to add the chopped vegetables along with yogurt , turmeric powder and red chili.
Stir well so that the masalas are incorporated well.

Add the chopped tomatoes and mix well.

Add rice ,water salt. For 1 cup of rice , 2 cups water.

Give a quick stir and close the cooker.
Keep it in high flame until 1 whistle and 7 to 8 min in slow to medium flame or until second whistle. Whichever is earlier.

Once cool down serve with raita / curry.

Sabudana upma






Ingredients
:-                                              


Soaked and drained Sabudana - 2 cups
Mustard seeds 1 tsp
Urad dal. 1 tsp
Green chilies 2 slit
Frozen Green peas 1 cup
Cashews - 10
Turmeric powder - 1 tsp
Salt to taste
Oil - 5 tblsp
Coriander leaves for garnishing
Lemon juice - 2 tsp


Method :-

1. Soak the Sabudana for 3 hrs and drain them and keep it aside for 3 to 4 hrs.
2. In a kadai add oil, when is it hot add the seasoning mustard seeds and urad dal followed by green chilies.
3. Add the cashews and toast them till they turn light brown.Add green peas and stir for a minute.
4. Add turmeric powder followed by Sabudana and keep stirring gently.
5. Add salt to taste and keep stirring slowly until the Sabudana turns transparent.
6. Add lemon juice and coriander leaves and give a quick stir.
7. Turn of the flame.Ready to serve. 

Tip:-

Cashews could be replaced with peanuts. Also you could add coconut gratings finally.

Rolled eggless no bake dates cake

Ingredients:-

Dates 400gms (seeds removed )
Butter 1/2 stick
Cardomom powder - 1 tsp
All purpose or maida flour - 1/2 cup
Assorted nuts crushed or just pulse it in mixer
Sugar optional ( adjust according to the sweetness of dates )

Method

1. Grind the dates after removing the seeds and keep aside.
2. Crush the assorted nuts and keep aside.
3. In a heavy bottom vessel put the butter and let it melt.
4. Add maida/all purpose flour to it and stir well  for 5 min. Add cardomom powder and turn of the stove.
5.Take a plastic sheet and grease it with oil/ butter, apply some oil to your hands too so that it makes your job easy.
6.First take the grinded dates and flatten it on the plastic sheet so that it forms a layer.

7. Above this add the maida/ butter and do the second layer above dates.
8. Add the nuts at the top and this forms the top layer.
9. With the help of the plastic sheet try to roll the three layers as shown in picture and remove the plastic sheet.

10. Refrigerate for 2 to 3 hrs until set and then slice them.
